Plant-Based Cooking
This is a LIVE 4-week online program designed to help anyone learn everything you need to know about a plant-based diet. There is truly no better time to improve your health and the health of your family and I believe a mostly plant-based (it doesn't have to be 100%) approach is the way to go. I will be teaching all my nutrition tips, strategies for menu planning, swap lists, and resources for anyone just looking to lean-in or go all the way. If you just don't know where to start or you want to take your diet to the next level and improve your nutrition intake, lower your inflammation, lose weight, and turn on the anti-aging switch in your body, this course will be a game changer.

Weekly Live Video Classes
Each week I will share a 1-hour pre-recorded class via ZOOM + stay for LIVE Q&A on Tuesdays at 9 AM OR 1 PM PT that will include cooking demonstrations and nutrition discussion, followed by Q&A. You do not have to attend live, and the class will be recorded and sent to all students. You can watch and re-watch as many times as you like.

Intro to Plant Based Diet
Week 1
No cooking involved for this week since I have so much to teach you to get this course off the ground before we even start to cook! Let's discuss what is a Plant-Based Diet? Spoiler alert - it is not necessarily vegan. It can potentially be Paleo or Whole 30. There is a lot to understand in terms of how to get the nutrition you need (think protein, calcium, iron, Omega-3's, and fiber.). How plant-based do you have to be to be considered plant-based? How do you construct a plant-based meal plan and have a wide variety of foods and essential nutrients? How do you not gain weight eating more carbohydrates? I will teach you all of this and so much more!
Proteins & Swaps
Week 2
Let's get cooking! I will teach you the best sources of plant-based protein and a variety of ways to cook them. I will also show you how to take existing recipes that call for animal protein and make them with less animal protein or the best plant-based swaps. I have never met a recipe I couldn't make more plant-based or fully plant-based!
Vegetables & Starches
Week 3
More cooking..There is no proponent of any worthy diet that doesn't think we need to eat more vegetables! Let's do a deep dive and explore all the benefits of vegetables, identify the most nutritious ones and get a little more creative. What are the best starches to consume and in what quantities?
Breakfast and Desserts
Week 4
Breakfast sets the tone for the day, so it's important to be thoughtful about what we choose to eat. Let's cook breakfast and desserts. I'll also share my favorite plant-based desserts and ingredient swaps so you can adapt your favorite recipes. Plus I'll give you my opinion about the best plant-based products on the market and the ones that are not as high quality.

Pamela has become a household name with my family. We went vegan in January 2020 and I was struggling to find recipes that everyone liked. Pamela made it so much easier. She provides instructions with her recipes to make dishes vegan or gluten free, etc. If you don't have both of her cookbooks, buy them and then buy them for your friend who loves food as much as you do!

About Me
I have loved good food and enjoyed cooking for as long as I can remember. As a child, while other kids were at the playground, I was helping my father in the garden, watering plants and vines and watching miracles happen. I come from a large Italian-American family where sit-down holiday dinners for 85 people are the norm (how, you might ask – organization! But more on that later …).
The food I grew up with was never fancy, even though my mother always had a subscription to Gourmet. But I knew where the food came from and it was always real. It wasn’t until I was an adult that I learned more about the nourishing and healing power of food. And it wasn’t until I volunteered as a nutrition docent in an elementary school for Growing Great that it truly crystallized for me — our society has a big problem. I knew I had to do something, but was unsure of where to start.
I was asked to teach a “healthful cooking class” for a group of young mothers. The business grew organically from that first group and I knew I had a message — and a new mission — in life.

A replay video will be available to all students in case you miss a call or would like to watch at your own pace. Replay videos do not expire and will be available to view in the private membership portal account.

Of course! With the free Zoom app, you will be able to access video classes from your phone or tablet without any additional software.
No, participants can only see and hear me. You can show up as you are! Your questions or comments are submitted in a chat box which all participants will see.

Since I can only cook a limited number of recipes in a 1 hour class and the saved zoom recordings are not high quality, I opted to have the cooking demos professionally recorded and edited to be able to include more content. The plus side is the video quality will be much better when you watch it again.
You will not need any fancy kitchen equipment, although I will offer suggestions on my favorite go-to tools. Having basic tools like a cutting board, knife, sheet pan, and skillet are great!.
No problem! I will offer plenty of substitutions you can use to adapt recipes.
With only a limited amount of spots available, sign up will be open until Jan 10 or until the course is full. Be sure to act fast to secure a spot.
Each student will receive login details after signing up to access their own private account on the membership portal (login link located in weekly emails and on my site, under Bootcamps) where course content is organized into weekly categories. This is where you will be able to access zoom invites, weekly downloads, and replay videos in case you miss an email.
