What's Included?
Weekly Live Video Classes
This course is divided into 4 modules. Each module includes a 1 hour video where I teach cooking demonstrations and nutrition discussion. You can participate in the course at your own pace.
Access to Private Facebook Group and Office Hour Meetings
You will have access to a private community and the opportunity to join weekly Office Hours meetings via zoom Wednesdays at 11 AM PST to ask me anything!
Private Membership
Students will have access to a private membership account where they will have lifetime access to all course content.

Getting in touch with the Basics
Module 1
I have taught in hundreds of home kitchens. I know what contributes to a stress-free space and what works against you. Let me show you the best and healthiest options for cookware, knives, and essential tools. I’ll demonstrate the knife skills you’ll use for the rest of your life and provide links for all my favorite kitchen items. I’ll also cover fats and oils, salt, preheating your pan properly, and provide a bonus video on slow cookers, air fryers, and the InstantPot.
Proteins
Module 2
I’ll demonstrate the most popular types of protein, including multiple ways to cook chicken PERFECTLY, steak, fish, shellfish and tofu. NO more dry proteins, or stressing out because you don’t know if it’s cooked properly.
Vegetables & Salads
Module 3
Vegetables and salads EXCITE me! Why? Because I know some secret ways to make them taste completely awesome and not boring. Spoiler alert: you might never buy salad dressing again.
Pasta, Soups, & Stir fries
Module 4
These 3 categories are my go-to for most dinners and they are the recipes that are the most flexible. I’ll show you how to cook any type of pasta perfectly, take 2 formula soup recipes and turn them into many different options, and learn some back-pocket methods for really fast meals. Just because you know how to cook, doesn’t mean you need to spend all day in the kitchen!

About Me
I have loved good food and enjoyed cooking for as long as I can remember. As a child, while other kids were at the playground, I was helping my father in the garden, watering plants and vines and watching miracles happen. I come from a large Italian-American family where sit-down holiday dinners for 85 people are the norm (how, you might ask – organization! But more on that later …).
The food I grew up with was never fancy, even though my mother always had a subscription to Gourmet. But I knew where the food came from and it was always real. It wasn’t until I was an adult that I learned more about the nourishing and healing power of food. And it wasn’t until I volunteered as a nutrition docent in an elementary school for Growing Great that it truly crystallized for me — our society has a big problem. I knew I had to do something, but was unsure of where to start.
I was asked to teach a “healthful cooking class” for a group of young mothers. The business grew organically from that first group and I knew I had a message — and a new mission — in life.
FREQUENTLY ASKED QUESTIONS
No. The course is online and self-paced so you can watch at your leisure. The only live component are the weekly office hour meetings via zoom where you can join me to ask questions.
I will be available via zoom on Wednesdays at 11:00 AM (Pacific Time) to answer any questions students have. You can access the zoom invite through the membership portal. Please feel free to join and ask me anything!
You can still take the course, but it will limit the support you can receive from other students.
I will be there every step of the way and will answer any questions you have during our weekly office hour meetings. You can also contact me through the private Facebook page or via email at pamelasalzman@gmail.com. For any tech questions, please contact my assistant at pamelasassistant@gmail.com.
You will not need any fancy kitchen equipment, although I will offer suggestions on my favorite go-to tools. Having basic tools like a cutting board, knife, sheet pan, and skillet are great!.
No problem! I will offer plenty of substitutions you can use to adapt recipes.
Each student will receive login details after signing up to access their own private account on the membership portal (login link located on my site, under Bootcamps) where course content is organized into modules. This is where you will be able to access pdf downloads, class videos, and office hour meeting information. Plus, you will have lifetime access to your membership account.
